What you're walking into isn't an accident. It's a system. Built into the pre-shift huddle, drilled at the side stand, refined over years by people who care more about the work than the paycheck. The great American chophouses have always understood this — the standard isn't a feeling, it's a discipline.

But the discipline is fragile. The captain who knew everything? She left for another house. The training binder? Outdated three updates ago. The new hire? Learning by watching, hoping it sticks. The standard erodes quietly, table by table, shift by shift, until one day a regular notices that something's off and they don't come back.
